For Kathy Gabriel, that was entering the world's toughest horse race, the Mongol Derby, not once, but twice. After chewing her up and spitting her out the first time, she had to wait another three years for the Pandemic to pass in order have another go in fulfilling her dream of completing this 1000km horse race across Mongolia.
